How do you prepare veggies so they taste good without adding any fat or dairy?

  • Get those little "steam fresh" bags, and splash a bit of chicken stock in before you pop them in the microwave.

  • A little "Good" fat is necessary in our diets... but there are lots of ways!

    Check this out for ideas if you're interested (You can simply omit the "fat" in most recipes)

  • I steam them then add a little olive oil & spices, grill them with olive oil & garlic, or I add olive oil & spices them roasth them in the oven.

  • Grill them. I am on a low fat, no dairy diet, so I live with this daily. You can grill most veggies (corn on the cob, asparagus, eggplant, portobello mushrooms, zucchini, etc). You will have to spray them with a cooking spray (which won't add significant amount of fats) to keep them from sticking to the grill, but here's what I do for certain veggies:

    corn on the cob: in the husk--pull the husks down, get out the silk, and wrap the husks back around the corn. Grill til tender, about 15-20 minutes is normally enough for me. Out of the husk--Spray aluminum foil with cookign spray and wrap around the corn loosely. Grill til tender. Also really good if you sprinkle on Mrs Dash fiesta lime seasoning :)

    asparagus: snap off the woody stems, spray with cookign spray, grill a few minutes til tender turning occasionally to get good grill marks. Toss with a little bit of lemon juice and salt before serving.

  • Also, roasted root veggies are SO good. Take 2 red potatoes, 2 carrots, a parsnip and a turnip. Peel them all except the potatoes. Cut into 1" chunks. Spray a cookie sheet with cooking spray. Toss the veggies with some italian seasoning. Spread in a single layer on the cookie sheet. bake at 425 til they start to brown, then flip them, and cook til the other side browns lightly. It normally takes about 25-35 minutes til they get tender. Toss with just a little bit of sea salt when they come out of the oven. SO good with roasted chicken!
