Anyone have any good Lentil recipes - that aren't soups?

I want to make something with lentils for dinner tomorrow - preferably where corn on the cob wouldn't be a weird thing it could go with, because the corn was on sale and I wanted to get some.

It's been super duper hot here the last few days (100+) so soup is out. Anyone have any other suggestions?

  • Here's mine. I follow the instructions on the package and the water reduces quite a bit so it comes out more like stew. My kids like to spread it on thick slices of french bread.

    I'll saute 1 onion with 2-3 cloves of garlic til limp, add some salt & pepper.

    Rinse lentil beans (the brown variety) and pour into pot of onions. Add 8 cups of water or chicken stock. I often use water with the powdered chicken bouillon (I follow the measurements on the jar), and I'm sure vegetable stock would do fine.

    Turn heat to medium low and cook approx 20 mins, then add thinly sliced carrots (about 4 carrots) or more if you prefer. Add sliced celery (about 3 stalks with the leaves chopped too). Simmer about 1 hr with cover on, stirring frequently. The soup will thicken. Serve over orzo pasta with a little olive oil and grated parmeson cheese. Enjoy!

  • I made a lentil confetti salad that is so good my kids cleaned it up.
    1 c. cooked lentils
    1 c. cooked brown or white rice
    1 tomato, diced
    1 carrot, sliced & diced or grated
    1 - 2 stalks celery, diced
    1 small onion, diced
    Italian dressing
    Mix all together and chill. Can serve topped with sunflower seeds or another topping of your choice.

  • If you want something cool you could make a lentil salad. Cook them and let them cool. Toss them with chopped tomatoes, crumbled feta and simple salad dressing like olive oil and rice vinegar.

  • how about cooking the lentils in water seasoned with chili powder and salt. cool and mix with the cooked corn, cut from the cob seasoned with peppers, onions ,Lime, tomatoes cumin ( or jarred salsa and Taco seasoning) and make a mexican lentil salad- you could even serve it warm in a flour tortilla with or without cheese.
