need chicken noodle dish

we have some chicken breasts
and i was just told, more coming over for dinner
so thinking of cutting up breasts and making some kind of noodle casserole dish
and more veggies

any ideas
i do have spagetti sauce

  • Melt 3 Tbsp. butter in a large skillet over medium heat. Add mushrooms and saute until tender (or just cook the canned mushrooms a bit). Remove with a slotted spoon and set aside.

    Sprinkle chicken with some salt & pepper, dredge in flour, shaking off excess. Melt remaining 3 Tbsp. butter in skillet. Add chicken and saute 5 to 6 minutes on each side or until golden brown. Transfer chicken to a plate and cover to keep it warm. Add chicken broth to skillet, scraping up browned bits. Bring to a boil, reduce heat and simmer until reduced to approximately 1 1/2 c. Stir in cream and lemon juice. Cook over medium heat until slightly thickened. Stir in mushrooms, white or black pepper, & add salt to taste if you like. Add chicken and simmer for another 15 minutes until sauce is medium thick consistency. Serve over rice or noodles (we prefer noodles.)

  • We JUST had this Sunday evening, and it's good! I ended up cutting the chicken breasts into smaller pieces so that they'd go farther.
    Chicken Breasts in Lemon Cream Sauce

    * 6 Tbsp. butter, divided
    * 12 oz. mushrooms sliced, or 12 oz. can mushroom pieces, drained
    * 6 boneless skinless chicken breasts
    * Flour to dredge
    * 2 c. chicken broth
    * 2 c. heavy whipping cream (I used evaporated milk)
    * 6 Tbsp. lemon juice (fresh or bottled)
    * 1/2 tsp. white or black pepper

  • We added green beans and a salad to our meal to round it out, along with a chocolate cake. :-)

  • It's not super spicy. You can add more pepper if you like. The citrus tang isn't too strong, just pleasant. My picky eaters enjoyed it!

  • Super Easy (in case you need/want more in the future)

    1 pkg egg noodles, cooked
    1 (10 oz) can celery soup
    1.5 C mixed veggies
    .5 C milk
    1.5 C shredded cheese
    1 stalk celery, chopped
    .5 C mayo
    1 jar mushrooms
    4 cooked (boiled or grilled) chicken breasts, diced

    mix it all up, pour into a large casserole dish, top with more cheese, bake for 30 - 45 minutes @ 350*

    super easy with lots of room to improvise. i always like to add a small handful of spices, a different combination every time. have fun with it! =)
