Grilled eggplant recipes anyone?

  • Grilled eggplant with a little balsamic vinegar and herbs and olive oil.
    •1 large eggplant
    •3 tablespoons olive oil
    •2 tablespoons balsamic vinegar
    •2 cloves garlic, very finely minced
    •1 pinch each thyme, basil, dill, and oregano
    •salt and freshly grated black pepper
    Heat grill.
    When grill is hot, slice eggplant about 1/2-inch thick. In a small bowl, whisk together the olive oil, balsamic vinegar, garlic, herbs, salt, and pepper. Brush both sides of the eggplant slices with the oil and vinegar mixture.
    Place eggplant on the hot preheated grill. Grill about 15 to 20 minutes, turning once.

  • Grilled Eggplant Parmesan
    1 medium (about 1 1/2 pounds) eggplant, cut lengthwise into 4 slices
    1 tablespoon(s) olive oil
    1 teaspoon(s) olive oil
    1/2 teaspoon(s) salt
    1/4 teaspoon(s) coarsely ground black pepper
    4 ounce(s) mozzarella cheese, shredded (1 cup)
    1/4 cup(s) grated Parmesan cheese
    1/2 cup(s) (loosely packed) fresh basil leaves, sliced
    2 medium ripe tomatoes, each cut into 4 slices

    1.Prepare grill. Lightly brush eggplant slices with oil and sprinkle with salt and pepper. In small bowl, mix mozzarella cheese, Parmesan cheese, and basil; set aside.
    2.Place eggplant slices on grill over medium heat. Cook 8 to 10 minutes, until tender and lightly browned, turning once. Top eggplant slices with tomato slices and cheese mixture. Cover grill and cook 1 to 2 minutes, until cheese melts and tomato slices are warm.

  • Tangy Spiced Eggplant Salad

    2 medium eggplants sliced into 1/2″ slices (crosswise)
    7 tablespoons olive oil (extra vigrin)
    1/2 cup balsamic vinegar
    2 garlic cloves minced finely
    2 tablespoons fresh lemon juice
    1 teaspoon ground cumin
    1 teaspoon ground coriander
    1/2 cucumber thinly sliced
    3 tomatoes thinly sliced
    1/4 cup plain yogurt
    salt and pepper to taste
    Brush olive oil on eggplant slices and grill (or broil) until golden brown on both sides. The eggplant should be tender. Allow slices to cool before cutting into quarters.

    Mix remaining olive oil with garlic, lemon juice, cumin, coriander, and vinegar. Season with salt and pepper then pour into a dish over the warm eggplant. Chill for at least 2 hours, up to over night.

    Toss cucumber and tomato with chilled eggplant. Drizzle yogurt on top before serving.

  • I take a big eggplant and slice it into circles about 1/4 " thick or less. I place the slices on aluminum foil on a cookie sheet. Drizzle Olive Oil over all of them to moisten. Sprinkle each with flavored bread crumbs then sprinkle with grated cheese. Sprinkle with a tiny bit more of Olive Oil then place in oven on 350 and bake until golden brown. Yummy!!

  • Curried Grilled Eggplant
    2 medium eggplants, cut crosswise into 1-inch thick rounds
    1/4 cup sesame oil
    2 tablespoons curry powder
    freshly ground black pepper
    3 tablespoons chopped fresh mint leaves
    Prepare grill to medium-high heat.

    Rub eggplant rounds on both sides with sesame oil. Sprinkle with curry powder, salt, and pepper. Grill until slightly charred, about 6 minutes per side. Sprinkle with mint to serve.
