Favorite vegetarian meals?

We love beans and lentils in this house and I have a pantry full, so I would love recipes with those ingredients! Thanks everyone!

  • Santa Fe Beans & Rice

    * 2 c. cooked white rice
    * 1 15 oz. can or 2 c. cooked black beans
    * 1 c. frozen corn or 8 oz. can sweet corn kernels
    * 1 10 oz. can Rotel tomatoes with chilies
    * 1 c. salsa
    * 1 c. lowfat sour cream
    * 2 c. shredded Mexican cheese blend
    * 1 small red or white onion, sliced or diced, your choice
    * 1 small can sliced black olives (or more if that's your preference)

    Preheat oven to 350°. IN a large bowl, combine drained beans, corn, tomatoes, salsa, sour cream, 1 c. cheese, and cooked rice. Season with salt and pepper to taste. Transfer to a greased 2 quart baking dish and top with onions and olives. Bake uncovered for 30 minutes. Sprinkle with remaining 1 cup cheese and bake 5 to 10 minutes longer until cheese is melted. I served mine with homemade tortilla chips. The family LOVED it!

  • Lentil Confetti Salad:

    * 1 c. cooked lentils
    * 1 c. cooked white or brown rice
    * 1 tomato, diced
    * 1 carrot, sliced, diced or grated
    * 1 stalk celery, diced
    * 1 small onion, diced
    * Italian dressing to taste (I use my own recipe from July 2009 post)

    Cool lentils & rice. Add rest of ingredients. Chill before serving.

  • lentils as your barbecue beans. You will find standard baked beans ingredients including molasses, brown sugar, ketchup, mustard, Worcestershire sauce, tomato sauce, and onions. This is simple and easy to make from scratch.
    Total Time: 1 hour, 30 minutesIngredients:
    •2-1/3 cups lentils, rinsed
    •5 cups water
    •1/2 cup molasses
    •2 Tablespoons brown sugar
    •1 Tablespoon vinegar
    •1/2 cup ketchup
    •1 teaspoon dry mustard
    •1 teaspoon Worcestershire sauce (may use vegetarian variety)
    •16 ounces tomato sauce
    •2 Tablespoons minced onions
    •1/4 teaspoon liquid smoke, optional
    Preparation:
    Add lentils to water, bring to a boil and simmer for 30 minutes or until tender but whole.

    Add molasses, brown sugar, vinegar, ketchup, mustard, Worcestershire sauce, tomato sauce, onions, and liquid smoke to the cooked lentils, stirring to combine.

    Bake at 350 degrees F for 45 minut

  • Black & White bean salad:

    * 2 c. cooked white beans
    * 2 c. cooked black beans
    * 1 tomato, diced
    * 1 stalk celery, diced
    * 1 small onion, diced
    * 1 - 2 Tbsp. vinegar
    * 1 - 2 tsp. olive oil
    * 1 Tbsp. parsley
    * salt & pepper to taste


    Combine ingredients. Chill before serving. We like to top each serving with a small handful of peanuts, cashews, almonds, or sunflower seeds.

  • Lentil Rice Salad
    1/2 bag of lentils (6 oz?)
    2 cup veggie broth or 2 bay leaves and water
    1 cup brown rice
    optional: slightly cooked veggies such as carrots, zucchini, onion, celery, etc.
    optional: 1 can diced tomatoes w/ green chilis
    Chili Dressing: (can adjust heat levels if you like it spicy!)
    3/4 cup olive oil
    1/4 cup red wine vinegar
    1 clove minced garlic
    1 teaspoon salt
    1 teaspoon chili powder
    1 teaspoon oregano
    1/4 teaspoon cumin
    dash pepper

    Directions:
    Cook lentils in broth or water. Drain off any extra that is not absorbed.

    In a separate pot, cook brown rice in 2 1/2 cup liquid.

    Cool each, and mix with optional veggies (its nice when they are grilled).

    Mix Chili Dressing ingredients well.

    Combine rice, lentils and veggie mix with the chili dressing.
