ANY Quick N Easy recipes but taste delicious??

I HATE COOKING! HEHE Any recipes out there that are quick n easy and taste delicious? thanks in advance!

  • Penne alla Vodka
    * 1/4 cup unsalted butter
    * 1 cup (50 g) grated Parmigiano (buy a chunk and grate it fresh)
    * 3 tablespoons tomato paste, diluted with 1/4 cup hot water
    * 1 hot pepper
    * 1/4 cup or so (maybe a third of a cup) good vodka -- you want something that has a taste to it
    * 1 teaspoon brandy
    * 2/3 cup fresh cream
    * 1 pound rigatoni

    Preparation:
    Bring pasta water to a boil, lightly salt it, add the pasta, and give it a good stir.

    In the mean time, melt the butter in a large pot and stir in the tomato paste and the hot pepper. Let the mixture simmer over a low flame for a couple of minutes, then stir in the cream, and when the sauce comes back to a boil, the vodka and brandy. Fish out and discard the pepper, stir in the grated cheese, and continue stirring gently until the sauce is well amalgamated and creamy.

    By now the pasta should be about done --

  • you want it still somewhat al dente. Drain it, transfer the pasta into the sauce (this is why you need a large pot), and cook over a brisk flame, stirring energetically, for about a minute to help the pasta absorb the sauce.

    Serve at once, with a light red wine.

  • Boil some water and cook some pasta.

    Heat 2 tbls of olive oil and add 1/2 of a chopped onion and 3 cloves of garlic minced or sliced. Saute until onion is translucent, add four rough cut tomatoes and 6 chopped up fresh basil leaves. You can add black or green olives if desired. Cook for 3 minutes, until the tomatoes wilt.

    Serve over pasta with or without grilled chicken. It only takes about 8 minutes to make and is SOOOO good!

  • I love using the crock pot.
    Here are some ideas:

    -Throw some skinless chicken in with a jar of salsa to make tacos, taco salad, burritos, burrito bowls... etc. Serve with rice (I have a rice maker), refried beans, lettuce, tomato, salsa, olives, cheese, green onions, pinto beans, avacado, sour cream... whatever you like.
    -Throw some skinless chicken in with a jar of spagetti sauce to make Itialian chichen, serve with parmesean and mozerella, or egg noodles, spagetti noodles, etc. You could probably make meat balls too if you get brave, I haven't done that.
    -Throw some skinless chicken in with your favorite jar of BBQ sauce, serve on hamburger buns or rolls for BBQ chicken
    sandwich.

  • Chicken parm. is not very hard to make. You can take the Perdue thinly sliced chicken and dip it in egg and seasoned bread crumbs. Fry up the chicken like you would for fried chicken. Then add your favorite jarred sauce, some grated parmesian cheese, and mozzarella. Bake the cutlets in a baking dish for 30 minutes at 350. And voila you have Chicken Parm. You can cook some spaghetti or pasta to go with it and top with your favorite sauce.

  • cook spaghetti noodles, whatever veggies you want (i like edamame & broccoli), and chicken breasts (all in different pans of course). then mix 1/4 c soy sauce, 1/4 c lime juice, & 3TB of honey together and toss over the veggies, noodles, & chicken. i also add some garlic and fresh mint but those arent necessary. its light & very tasty.

  • Pork Chops and Pasta:
    4 boneless pork chops
    1 can diced tomatoes undrained, 1 can of tomato sauce (not pasta sauce)
    2 cloves garlic chopped fine
    1-2 tbsp chopped basil and chopped parsley
    ground pepper to taste/crushed red pepper flakes (optional)
    grated parmesan, mozzarella
    Pasta--I use penne or fettucine for this recipe.
    While the water is boiling , brown the pork chops in a skillet. Drain or blot w/ paper towels. Add tomatoes, garlic, herbs. Simmer. Cook pasta according to directions, when you drain it, save about a half cup of pasta water because it has a lot of flavor. Take the pork chops out. Add the water and pasta to the sauce and cook for about a minute or so. Top with cheese.
    It's very flavorful and filling and so easy. It usually takes about 30 minutes from start to finish.

  • This is just a dip/topping sort of dish I make, it's not Italian but it is delicious and healthy and quick!

    Chop the following ingredients (one of each to serve about 2, just double it for a larger portion)

    onion (any kind)
    avocado
    tomato

    Squeeze a fresh lime over this mixture, then add some sea salt and cracked peppercorns. Add basil or cilantro if you like. Serve with whole grain tortilla chips or use it to top tacos or other mexican dishes. I even top turkey burgers with this, it's soooo yummy I make it about once a week.
