chicken gravy

how do you make chicken gravy. I am cooking a chicken in a crock pot and theres alot of juice and wondering how to make gravy. thanks

  • use the left over bits/pieces that fall off, and the 'broth' , instead of the usual/total amount of milk, along with flour/salt/pepper/etc.

  • Put about 2 or 3 tablespoons of the liquid in a skillet with a tablespoon or two of flour. Stir until the flour just barely starts to brown (think golden yellow, not spray tan). Add more liquid - water, broth, stock. You can use milk if you want a cream gravy. Keep mixing then let it simmer until it reduces down to the thickness you want.

  • mix two tablespoons of cornstarch or flour into half a cup of milk until smooth, then stir into juices and bring to a boil. add salt and pepper to taste.

  • BTW - the gravy works better if the chicken is cooked on the stove or in the roaster - you won't have any of the carmelized pieces to add the flavor. Next time, brown the chicken before it goes in the crockpot and save the pan drippings/scrapings for gravy in the fridge.

  • I just add cornstarch to the extra juice and stir it over medium heat until it thickens. Prolly about a fourth of a cup of cornstarch, but it really depends on how much chicken juice you have.
