low cal/fat shrimp/pasta dishes?

I'm thinking about making something with shrimp tonight. Recipes/suggestions would be appreciated! Thanks.

  • Shrimp and Angel Hair Pasta
    Ingredients:
    •Juice of one lemon, divided
    •Lemon zest
    •1 tsp dried oregano
    •20 medium shrimp, tail on
    •1/2 jar roasted red peppers
    •8-ounces angel hair pasta
    •1 cup peas
    •Freshly ground black pepper

    Preparation:
    Combine lemon zest, and half the lemon juice in a dish. Add shrimp and marinate for 10 minutes. Chop red peppers and put to one side.
    Place a large pot of water on to boil for the pasta.
    Place angel hair pasta in pot, followed by peas. Cook pasta according to package instructions.
    Preheat broiler, and spray broiler pan or baking sheet with nonstick cooking spray.
    Arrange marinated shrimp on broiler pan, and broil 3 minutes first side, and two minutes the other. Do not overcook. Remove from heat.
    Quickly drain pasta and peas, and empty into a large serving bowl. Add shrimp and chopped peppers; pour remaining lemon juice over the

  • Saute shrimp and veggies in a pan with garlic and a little olive oil. Serve over whole wheat or brown rice pasta with a bit of low fat cheese. Easy, quick, and healthy.

  • use the Bariila plus pasta- don't eat too much. shrimp is low fat. you can make a "creamy" sauce with canned evaporated fat free milk or Fat free half and half. and a bit of strong cheese like feta or Parm or Romano. olive oil and lemon is nice too- use some garlic and fresh dill or basil and some chopped tomato. No fat in a tomato sauce.

  • GARLIC SHRIMP AND PASTA

    1 (14 1/2 oz) can Swanson Chicken Broth
    2 tablespoons cornstarch
    2 garlic cloves, minced
    3 tablespoons chopped fresh parsley (or 1 tablespoon dried parsley)
    2 tablespoons lemon juice
    1/8 teaspoon ground red pepper
    1 pound medium shrimp, shelled, deveined
    4 cups hot cooked thin spaghetti, cooked without salt

    In medium saucepan mix broth, cornstarch, garlic, parsley, lemon juice and pepper. Over medium-high heat, cook until mixture boils and thickens, stirring constantly.

    Add shrimp. Cook 5 minutes or until shrimp turn pink, stirring often.

    Toss with spaghetti.

  • Lowfat Shrimp Scampi with Spinach and Tomatoes
    Ingredients
    2 tsp Olive Oil
    1 tsp Butter
    3 cloves garlic, minced
    1 green onion, finely sliced
    6 oz. cooked shrimp (about 20 medium shrimp)
    2 cups baby spinach, chopped
    1 cup chopped tomatoes (canned are fine)
    juice from one lemon
    1/4 c. dry white wine
    salt and pepper to taste
    2 oz. Barilla Plus Angel Hair pasta, cooked aldente and and drained (slightly more than 1 cup cooked pasta)
    1 tbs. shredded Parmesan/Romano cheese

    Directions
    Heat olive oil and butter over medium heat. Add garlic and onion and sautee for 1 min. Add shrimp, spinach, and tomatoes and sautee for 1 min. Add lemon juice and wine, salt and pepper and heat through for 2 min while stirring. Divide into 2 servings and serve with slightly more than 1/2 cup of pasta and 1-2 tsp of parmesan cheese.
