  • Portabello sandwiches - just buy big portabello mushrooms, add some seasoning, throw them in a pan or the grill about 3 mintues on each side -get a harder crust bun -cut it in half and put 2 slices of provolone cheese mmmm.. its SO good

  • we like homemade pizza, we have lots of tofu dishes we eat, of course pasta of all kinds, homemade veggie casseroles, veggie Mexican is super easy. We'll do taco's, enchilada's, burritos, we LOVE felafel's and all the other middle eastern foods. We pretty much eat normal foods, but just substitute the meat. I do eat meat, but DD is vegetarian. So, we pretty much eat vegetarian too. We go all out for breakfast with veggie sausage, french toast, pancakes, cheese grits. Yeah.. we love food in our home! We di eat plenty of dairy though...

  • Cream of Broc soup, Salad, baked potato with chili on top, spinach and artichoke dip, TX Caviar Dip,Oatmeal with strawberries, banana, blueberries on top, cereal with fruit, sweet potato pie, sweet potato french fries, Alfredo, Lasagna, Spaghetti, quiche (although that does have eggs), Stir Fry, Grilled veggies & fruit,

  • Chili. I make it normal, but without the meat and add chopped up carrots and french styled green beans. Yum!

  • i just made a yummy squash and corn chowder last night (cookinglight.com) just leave out the bacon. It was really really good

  • I think the only vegetarian meals I can get the whole family to eat is cheese ravioli with sauce, Lasagna, manicotti/stuffed shells or pizza. Other then that they are all about the meat!! LOL

  • Vegetable soup made with whatever veggies I've got in the refrigerator and/or freezer. I just dump it all in the pot with a nice vegetable stock for extra flavor. Then I make either whole grain rolls or a loaf and we dip the bread in the soup (I keep homemade bread dough ready to go in the freezer). Sooo good!

    Another fav is rice cooked in vegetable broth and tossed with fresh or frozen veggies, whatever's on hand, then rolled up in a tortilla with hummus.
