what's your favorite homemade cake recipe?

i think i'll make cupcakes today..anything simple?

  • I am going to make this cake for my hubby's birthday next month:

    Deeply Chocolate Mocha Cake
    1 3/4 c. cake flour, sifted
    3/4 c. cocoa, sifted
    2 t. baking soda
    1 t. baking powder
    3/4 t. salt
    3/4 c. buttermilk
    3/4 c. strongly brewed coffee, cooled
    1/2 c. melted butter
    2 eggs, room temperature
    Preheat oven to 325. Grease and flour two 9" round cake pans. Combine and sift together all dry ingredients into bottom of mixing bowl. Make a well in the center. Pour in liquid ingredients ad beat 2 minutes on medium. Batter will be very thin. Don't worry it will be fine. Bake for 35-40 minutes. Check with a toothpick at 30 minutes to be sure. Must cool for a lengthier amount of time in the pans. Cake is very soft and light and will break apart if it is too warm. Let cool for about 20 minutes in the pan before turning out onto racks to cool completely.

  • Marble Cupcakes. My husband and I had our wedding cake made marble and I think the groom's cake was also marble.

  • I really like chocolate pound cake. I haven't had it a while. It's not that hard to make either. You just have to make it in a loaf pan. i have to figure out what I did with it.

  • I am making this icing to go with it:

    Incredibly Light and Delightful Frosting
    5 T. flour
    1 c. milk
    1 t. vanilla extract
    1 c. granulated sugar
    1 c. butter, softened
    Whisk together flour and milk over medium heat in saucepan. Cook until very thick. Cool completely. Add vanilla and mix well. Beat sugar and butter until very light and fluffy. Add the flour/milk mixture, making sure it is not the slightest bit warm. Beat on medium high until it is similar in texture to whipped cream.
