Dessert help needed

I need to make a dessert to bring to a dinner party tomorrow night. It has to be on the gourmet side (or at least look/taste like it) but travel well, needs to feed 7 adults (however... I always like to have more than just enough), and be a light fruit type dessert (summery)

  • Berry Trifle
    1 10.75 oz pound cake
    1 10 oz pkg. frozen blackberries
    1 10 oz pkg. frozen raspberries
    1 10oz pkg. blueberries
    1 5 oz pkg. instant vanilla pudding
    1/2 c milk
    1 14 oz.can eagle brand milk
    1 8 oz cool whip
    Cube cake- put in a trifle or clear glass bowl
    Layer on the berries
    Mix pudding, milk, eagle brand, 1 c cool whip
    Pour over the berries
    Top custard with the rest of the cool whip and refrigerate for 3-4 hours

  • super easy --- use stawberries and blueberries that you have cut and washed and soaked in sugar water as the topping. dont top with fruit until ready to serve. they look so good and amazing - on paula dean's website and they are sooo easy!

    Cheese Cake Tarts

    2 (8oz.) Cream Cheese (softened)
    1 cup sugar
    1 teaspoon vanilla
    2 eggs
    12 Nilla Wafers
    1 can cherry pie filling or other topping (ex: berries – as pictured)

    Preheat oven to 350 degrees.
    Fill cupcake liners with Nilla Wafers.
    Beat cream cheese; add sugar, vanilla and eggs.
    Spoon mixture into cupcake liners.
    Bake 20 minutes.
    Cool and top.

  • One of my friends make these cookies that are amazing.
    They are just sugar cookies, then i believe she mixes cream cheese and whip cream together and spreads that on each cookie, then she puts fruit on top (usually uses strawberries/kiwis, but you can really use anything) and then drizzles chocolate over it. They are always a hit!

  • oops - doesnt say that after cooled - take cupcake liner off the tart to serve. then top with berries.

  • You could make a Pineapple Upside Down Cake which is baked and will stay well in traveling. I was going to recommend something called an Icebox cake but that has chocolate wafer cookies and whipped cream which is put into the refrigerator to cool for a couple of hours. You can put sliced strawberries on top for decoration. The cake upside down cake will travel well but I dont think the icebox cake will.
