Does anyone have a recipe for making pickles and salsa?

  • For my salsa, (which isn't canned - you have to eat it fresh), I just combine a bunch of fresh veggies with lemon or lime juice, a dash of hot sauce, and cilantro, and then also equal parts sugar and salt - that's the key. For veggies, I would use anything from this list: tomatoes, carrots, cucumbers, mango (yes I know it's a fruit), baby corn, corn, bell peppers, fresh jalapeno peppers (for hot salsa), banana peppers, etc etc!

  • For Salsa, I dice 7-8 roma tomatoes, 1 jalapeno, 1/2 onion. Mix together 2 tbs olive oil, kosher salt, and a big bunch of fresh cilantro, add to the veggies. Let it sit at room temperature for about 1/2 hour before serving.

  • Salsa Fresca - Santa Fe School of Cooking Cookbook

    4 or 5 Roma tomatoes diced
    1 teaspoon minced garlic
    1/4 chopped onion red or white
    1/4 cup fresh lime juice
    1 -2 jalapeno seeded and finely chopped
    3 tablespoons of coarsely chopped fresh cilantro
    1 tablespoon olive oil
    salt to taste

    I add more garlic and cilantro - It's a big hit in our house. Good luck!

  • Go to the library and take out a copy of the Fanny Farmer's Cookbook. That book has recipes for making anything out of your garden. The New York Times cookbook has some great Salsa recipes too.

  • Salsa Fresca

    8-10 Roma tomatoes, seeded, if you wish, and coarsely chopped
    1 oe 2 fresh jalapeno, seeded,
    1 large, sweet onion finely chopped
    1 tbs dry, or 4 tbs fresh cilantro
    1 tsp cumin
    Dash of salt
    Cracked black pepper
    2 Tbs lime juice
    1 tbsp extra virgin olive oil

    Combine tomatoes, jalapeno and onion in a bowl, sprinkle with salt and let set for 10 to 20 minutes; drain. Add rest of the ingredients.
