I found an excellent recipe today!

Since there is an abundance of zucchini in the gardens now, I have a couple from relatives. I had a sweet potatoe too. Looked at what to make with them that my 10 month old can eat that is also gluten free. I made latkes. Here is the recipe I came up with for anyone interested.
1 medium zuc, grated 1 egg
1 med sweet pot, grated gluten free baking mix, maybe about a cup (flour if able to use)
1/4 cup onion, grated salt and pepper to taste added chilli pepper to taste

Fried by the spoonful in veg oil. My 23 and 10 month old sons loved them. They were excellent.

  • Yummy I just picked 2 zucchini's that are huge I mean like 3 pounders a piece. But always looking for new recipes. we will try to tonight.

  • Ooh - I may have to try that! We tried a couple new-to-us veggies last week, and I shredded & froze 5 zuccini and have 1 huge one left to use fresh - this weekend, I'm thinking!

  • Yeah, TY! I made fried zucchini last night and our boys didn't like it. I chopped up a huge one,grrrrrr.. They like it just chopped up and made in a salad. I learned my lesson.

  • While I cannot stomach Zucchini ~ I just saw them make this on a cooking show yesterday! It looked great and I thought it was a really creative way to prepare it!
