I have a zucchini and a yellow squash

Now I need some recipes. No cheese or dairy please. Can you give me some ideas????

  • I slice them and cook them in a skillet with a little olive oil with sliced bell peppers and sliced onions.

  • zucchini "cakes". shred them and add a tiny bit of flour, salt, pepper and diced onion. pan fry in oil on each side.

  • I like to grill them. We just slice them up, put in tin foil with a little olive oil and seasoning (we use McCormick's steak seasoning, but salt and pepper would be good) and throw them on the grill. Sometimes I throw in some eggplant with it too.

  • I used a sweet potatoe and a zucchini yesterday. I shread them both in the food processor. Then I added about 1/4 cup shred. onion. Salt, pepper, chilli powder for taste. One egg. One cup of flour (my baby has to have rice flour for wheat allergies, but any kind of flour works). Then I fried them up. They were great.

  • I slice them and saute them in Gazebo Room dressing (or you can use any kind of sun dried tomato dressing, yum) with broccoli, onions, snow peas and carrots. When tender I mix them with cooked noodles (any kind). Sometimes I also put some cooked chicken or pork in with it.

  • We love just cutting them lengthwise and putting them right on the grill. Nothing need to be added they are so wonderfully yummy.

  • I cook them a couple different ways. Fried up in olive oil with some herbs added. You can also boil them but do NOT overcook them or they get mushy. Also great in stir fry's.
