My husband loves his meat too, lol. We usually have some type of grilled lean meat, chicken, pork tenderloin, london broil, even ham steaks (98% fat free), and then I load up veggies he loves (we never have starch with dinner), grilled asparagus, roasted broccoli or brussels sprouts, grilled zucchini, squash, etc... big salads with mixed greens, tomatoes, feta.... In the winter I make a chili with boca crumbles and it is LOADED with veggies, he has no idea there is no meat in it, lol. Or I make stuffed peppers with the boca crumbles too. I make alot of cheeseless Mexican, you'd be surprised how you don't even miss the cheese, and I load those (fajita, enchiladas) with tons of veggies, peppers, onions, mushrooms, etc... I also make a hearty chicken soup with lots of veggies. He loves all of these dishes. Even when we are being bad and I make a sausage spaghetti sauce that gets loaded with veggies too.
