Recipes/food for camping

Does anyone have any good ideas for meals for 1 day/ 1 night camping trip? I guess really we would only need to worry about dinner and breakfast, maybe lunch. For just 2 people.

  • We liked to put hotdogs on a stick and roast them over the fire, with smores for desert. Breakfast is great with scrabled eggs and bacon. Just mix the milk and eggs before you leave and put them in the coldest part of the cooler, that way you don't have to bring milk. And then you have lunch meat sandwhiches for lunch.

  • poor man taco salad were a huge hit for us! if you cant find anything good go to tasteofhome.com good luck and enjoy that cmping trip!

  • Foil packet dinners.... make a pouch out of heavy duty foil... place thinly slices carrots, potatoes, shaved or ground beef, salt & pepper, any other spices you like, maybe some chopped onion, peppers, anything you like... add a little butter... seal the packet, place in the hot, hot coals of the fire, flipping once... cook for about 30-45 minutes... checking occasionally. This is so good!!!

  • For breakfast... hollow out an orange that has been cut in half.... place the cup formed by the peal in the fire coals.... crack and egg into the "cup" and keep any eye on it until it's done.... orange poached egg... also very yummy!! ;o)

  • hot dogs, hamburgers, anything cooked over a fire is good! For your meat, have it in any spices you want to use in a ziploc bag in the cooler, makes it easier to just pull out & grill

  • Are you tent camping or using an RV? I think it is easiest to just bring some things to throw onto a fire like hot dogs or hamburgers. You can put boneless chicken breasts into a ziplock bag and pour a bottle of your favorite salad dressing over it. The chicken will marinate and will be wonderful grilled over a fire. You can make up foil packets of veggies in advance and just take them out of the cooler and pop them on the grill. Make some sandwiches up ahead for lunch. It would also be easy to mix up a pasta salad with italian dressing on it instead of mayo. That would be less likely to spoil.
