  • the most important thing is to shock them. i learned it on jamie oliver. as soon as u move water off them, very quickly apply cold water n let them sit 1-2 minutes. perfect :)

  • add a table spoon of vinegar to the water with the eggs.

I also peel when they're cold.
cold shrinks things (like the egg inside the shell) so the shell comes off easier.

  • peel them when they are warm to the touch. I find the shell comes off the easiest then.

  • Use older eggs. According to Joy of Cooking, fresh eggs stick more than older eggs.

  • I soak mine in cool water just long enough to make them easy to handle and then peel them with no issues.

  • peel them once they are cooled is easiest. well , i leave them in the water and then once it's down to room temp or you blanch them and the shell is cool is the easiest. good luck

  • OK... I've been using fresh eggs and pealing them cold. Since I need them tomorrow, I'll have to go with them... LOL. I'll try pealing them hot this time and see how that goes. Thank you all so much!!! ;o)
