Anyone have a good recipe for Peach Jam or Preserves?

I have peaches coming out of my ears....

  • OLD FASHIONED PEACH PRESERVES

    □ 4 c. sliced peaches
    □ 4 c. sugar

    Wash and slice peaches, mix with sugar, cook over low heat until peaches turn transparent, stirring often, turn heat to medium or high and boil steady, stirring often to prevent sticking until fruit and syrup drop from a spoon all at once, remove from heat and stir foam down, put in hot jars and seal.

  • I just made a TON. Pit, peel slice peaches. No need to be neat about it. Put in a pot with 1/4 cup of sugar for every 2 1/2 cups peaches. Cook down over med to med high heat. A couple times I smash the peaches with a potato masher after they are soft. To check for the right consistency, when it is about reduced by 1/2 put a small glob of it on a small dish and put it in the fridge for a few minutes to cool. if it is the consistency of ketchup then it is ready.
