oatmeal muffins?

anyone have a good simple recipe? I am very low on the staples, but I could whip something up...just can't find a good simple recipe! thanks!

  • This is a universal muffin recipe for 12 muffins; the oatmeal can either be part of the grain or part of the additions:

    2 to 2 1/2 cups grain
    1 cup milk
    Up to 1/4 cup fat
    1 egg
    Up to 1/2 cup sweetener
    2 teaspoons baking powder
    1/2 teaspoon salt
    Up to 1 1/2 cups additions

    Bake at 400 degrees for approximately 20 minutes.

  • just add a cup of oatmeal to any muffin recipe and cut back on the flour

  • Here's the one I use:
    1 c. rolled oats
    1 c. milk
    1/3 c. butter or margarine
    1/2 c. brown sugar
    1 egg
    1 c. flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    1 tsp. salt.
    Soak rolled oats in milk 1 hour.
    Heat oven to 400°. Grease muffin pan cups or use paper baking cups. Mix butter or margarine, sugar, and egg well. Blend dry ingredients; stir into shortening mixture alternately with rolled oats and milk. Fill muffin cups 2/3 full. Bake 20 to 25 minutes. Serve hot.
