Do you have a zucchini bread recipe?

I have two zucchinis left over from dinner the other night and would like to use them. I did have a recipe for zucchini bread but can't find it. Do you have a good zucchini bread recipe?

  • Spiced Zucchini Bread Recipe
    Ingredients:
    •3 eggs
    •1 cup vegetable oil
    •2 cups granulated sugar
    •2 cups grated zucchini
    •2 teaspoons vanilla
    •3 cups all-purpose flour
    •1 teaspoon salt
    •1 teaspoon baking soda
    •1 teaspoon baking powder
    •1 tablespoon ground cinnamon
    •1 teaspoon ground cloves
    •1 teaspoon ground allspice
    •3/4 cup wheat germ or chopped nuts
    •3/4 cup raisins or chopped dates, optional
    Preparation:
    Beat eggs until light and foamy; add vegetable oil, sugar, zucchini and vanilla. Mix lightly but blend thoroughly.
    Mix together flour, salt, baking soda, baking powder, and spices; mix lightly. Add dry ingredients to first mixture, stirring to blend. Stir in nuts or wheat germ and raisins or dates, if using.
    Pour batter into two loaf pans, 9x5x3-inches in size. Bake at 325° for 50 to 60 minutes, until a toothpick inserted near center o

  • Zucchini Pineapple Cake

    Heat oven to 350 F

    2 cups sugar, 1 cup oil- beat well with mixer

    add 3 eggs, 1 at a time, beat until fluffy

    add 2 cups well-drained grated whole zucchini, mix

    add 1 1lb can well-drained crushed pineapple

    add 3 cups flour, 1 TB baking powder, 1 tsp baking soda, 1 tsp salt, mix

    add 1 cup nuts, ½ cup raisins, mix

    pour into 2 greased loaf pans, bake at 350 ½ -1 hour or until well done.

  • Dark Zucchini Bread

    Heat oven to 350 F

    3 eggs, beaten with mixer until frothy

    add 2 cups sugar, 1 cup vegetable oil, 2 TBL vanilla, beat until thick and lemon colored

    add 2 cups zucchini, grated and loosely packed, undrained

    add 2 cups flour, 1 ½ TB cinnamon, 2 tsp baking soda, 1 tsp salt, ¼ tsp baking powder

    fold in 1 cup nuts

    bake in 2 ungreased loaf pans, 350 degrees, 1 hour, cool 10 min. in pan

  • 2 cups drained zuch
    1 cup drained crushed pineapple
    3 beaten eggs
    1 cup oil
    2 1/2 cups sugar
    1 tsp vanilla
    3 cups flour
    1 tsp salt
    1 tsp baking powder
    1 tsp baking soda
    1/2 cups chopped nuts, pecans or walnuts if you like

    Beat eggs, add sugar, oil and vanilla. Add zuch and pineapple. Add flour, salt, powder and soda. Add nuts. Bake in 2 loaf pans for 1 hour at 350.
    Freezes well too.
    This was my exhusbands gramma's recipe. I just got a loaf out today to take to church. I LOVE IT
