What can I make with some fresh Nectarines?

I was thinking maybe puree and add to yogurt for my son. But Maybe you ladies have a more creative idea.

  • You can cut them in half and grill them on the grill. YUM! Just drizzle a little honey on top when they are done and serve with ice cream...

  • Fruit Salad

    1 red apple, cored and chopped
    1 Granny Smith apple, cored and chopped
    1 nectarine, pitted and sliced
    2 seedless green grapes, cut into half
    1/2 cup dried cranberries
    1/2 cup chopped pecans
    1 (8 ounce) container nonfat key lime yoplait yogurt

    Strain the yogurt with cheesecloth two times. In a large bowl combine everything but the yogurt. Then mix in yogurt. Chill until ready to serve.

  • Peach-Nectarine Muffins

    1 1/2 cups all-purpose flour
    3/4 cup white sugar
    1/2 teaspoon salt
    2 teaspoons baking powder
    1/3 cup vegetable oil
    1 egg
    1/3 cup milk
    1 large ripe peach - peeled, pitted and diced
    1 very ripe nectarine, pitted and diced
    1 tablespoon brown sugar

    1. Preheat oven to 400 degrees F (200 degrees C). Grease 8 muffin cups or line with paper muffin liners.
    2. In a large bowl, combine flour, sugar, salt and baking powder. Add vegetable oil, egg and milk; mix well. Fold in diced peach and nectarine. Fill each muffin tin to the top with muffin mix. Sprinkle a little brown sugar onto the top of each uncooked muffin.
    3. Bake in preheated oven for 18 to 20 minutes. Check muffins regularly after 15 minutes of baking. Serve warm or cool.

  • White Sangria
    Fruit Salad. Even just Nectarine and Blueberries are good.
    Cut them up and freeze them for a sweet treat or smoothy ingredient.
