Favorite flour used in baking?

I have to use unbleached flour like Hechters or King Arthurs flour in my baking. It's considered better for you that way. When I make ravioli and pasta I like to use semolina flour to make it come out to the consistency that will go through the attachment on my Kitchen-Aid mixer. How about you?

  • For cakes I like Soft as Silk or one of the other fine cake flours.
    King Arthur is good for homemade bread. White Lily is a good one for quick breads, though I have one or the other and not both. I use store brands sometimes also.

  • King Arthur is the only flour I use when baking.

  • When it comes to baking I like to use the appropriate type of flour, if possible. I find their is a difference.

  • We buy the 25 lb bag of bread flour at Costco. We bake a lot in the winter and it goes a long way. We do add other flours like whole wheat, quinoa, spelt and brown rice. I also keep an bag of all purpose stuff around for things like adding to cake mixes (we live at altitude.)

  • Don't know what brand -- I buy 50 lb. bags of unbleached flour at a bulk food store and it comes in a plain brown paper bag.

  • I like King Arthur, and Montana Sapphire. In the fall/winter I bake a lot of bread, these brands seem to make a better loaf.
