  • My favorite thing to do with chicken is put some of that Lawry's teriyaki marinade with pineapple on it and then put chunks of pineapple on top of the sauce and bake it. It goes great with rice and steamed veggies.

  • To me, chicken thighs say fricasee! lol
1 pkg (3-4 lbs) chicken thighs
    4 c. chicken broth
    3 carrots, halved
2 to 3 celery stalks, cut in thirds
    1 sm. onion, quartered
    1 bay leaf
    2 pinches rosemary
    2 tsp. salt
    1/8 tsp. pepper
Yukon or Dutch Red gold potatoes, peeled and cut into about 2 inch pieces.

Brown chicken skin side down in olive oil. Add ingredients except potatoes and simmer 1 hour. Add potatoes and simmer another 30 min until chicken and potatoes and carrots are all tender.
For creamier sauce, add 1 can mushroom soup, and simmer to heat.
