Picking up veggies from a farm share today. What should I make with them? I'm sick of salad!

I joined a farm share where my neighborhood buys crops from a local farmer and distributes them once a week.

This is what I'm getting this week:
Red beets, parsley, basil, green romaine, bok choy, green iceberg lettuce, onion, snap beans, cherry tomatoes, heirloom tomatoes, fennel, garlic, ong choy (chinese water spinach)

What should I make with them?

  • Throw out the vegetable and go out to dinner.

  • Use the lettuce,onions and tomatoes for tacos and the beets boil them up another night with some kind of meat and dry out or freeze the herbs, snap peas and bok choy can be in a stir fry with beef or chicken
    the cherry tomatoes would go with a dish of cottage cheese, use the romaine for sandwiches

  • Roasted beets (peel, slice, sprinkle with evoo, salt & pepper. Roast @ 400. Sprinkle with torn basil... mmm...)

    Stir fry Bok Choy (slick, flash fry in hot pan with oil & garlic, drizzle w/ sesame oil & dash of soy)

    Parsley- Make Tabbouleh (google, or I will share recipe! also uses tomatoes)

    Roasted tomatoes w/ goat cheese (Slice tomatoes in half (cherry), roast in small shallow dish w/ garlic, evoo, pepper & salt. Sprinkle w/ torn basil & goat cheese. Serve w/ crackers, or atop any favorite meat)

    Fennel is awesome roasted w/ the beets, btw!.... Well, I know what I want for supper now! lol

  • ohh and you can use the basil and tomatoes on a grilled cheese or a pizza and the on choy can be mixed with your stir fry, I can think of a ton of things,

  • You may not be fond of salad, but romaine is awesome... I've got some killer vinaigrette recipes if you're interested!
