Does anyone have any great lentil recipes?

I have two bags of lentils, but no recipes and no idea of how to cook them. Help?

  • To cook lentils, measure 1 part lentils, 2 1/4 parts water. Bring to a boil, reduce heat, cover and simmer for about 12 to 15 minutes or until tender.

  • Lentil Confetti Salad:

    * 1 c. cooked lentils
    * 1 c. cooked white or brown rice
    * 1 tomato, diced
    * 1 carrot, sliced, diced or grated
    * 1 stalk celery, diced
    * 1 small onion, diced
    * Italian dressing to taste (I use my own recipe from July 2009 post)

    Cool lentils & rice. Add rest of ingredients. Chill before serving.

  • I just love lentils! I like to make a soup - 1/4 cup of lentils, a can of chicken broth or beef broth (your preference), a can or two of water (again, your preference - I like lots of broth), one potatoe quartered, diced carrots, 1/2 cup chopped onion, and one hot cajun hot dog/sausage sliced very thin (gives a wonderful flavor "kick").

    Course, you can add your own favorites to the mix, like corn or more potatoes. Give it a try.

  • Lentil soup:

    Vegetable better than bouillon for liquid base

    One large red onion, grated
    One large potato grated
    3-4 carrots grated
    Garlic ( i go heavy on it sometimes lol)
    Natures Seasons (its just a mix of onion and garlic powder salt pepper etc)
    Ground black pepper, i like extra fresh pepper in soup
    Olive oil
    Bag of lentils

    I put the oil in a soup pot, add the grated vegetables and saute till they are almost cooked through and add the garlic when they are almost finished, then I add enough water to fill the pot about 1/4 way full, and let it heat up, once its hot i start dissolving the better than bullion, i make it pretty strong, then add water till its how much volume i want, taste it, add more bullion paste if needed once it boils again i add lentils and the rest of the seasonings and let it cook till the lentils are cooked through, you can make lentil soup thin or chunky.
