  • My mother is law makes good stuffed peppers. She mixes ground beef w/ rice, onion and various seasonings and forms kind of a ball with it.. Then puts it in the hallowed pepper and pours tomato sauce over it. :)

  • Meatloaf, the best in the world: one pound ground beef, diced onions or onion soup mix, handful of crushed cornflakes, one egg, bake for .... I forgot how long, 40 minutes? Sooooo good, especially with mashed potatoes.

  • Meatloaf
1 lb very lean ground beef
    1 lb ground pork
1/2 of large yellow onion chopped finely
1/2 cup each diced red and green bell peppers
1-2 ribs of celery finely minced
    8 oz can tomato sauce
1/2-3/4 cup of uncooked oatmeal ( can substitute ground up Saltines roughly 3/4 of a sleeve)
    2 eggs,lightly beaten
    1 tsp salt
    1tsp freshly cracked pepper
    1-2 tsp worchestershire sauce
    BBQ sauce
Combine meat, veggies and spices in a bowl until well combined.(I do it by hand),. add eggs and oatmeal, work in well. Add most of the can of tomatoe sauce continuing to blend. After places the mixture in a pan evenly paint the top with a coat of BBQ sauce. I cook in a 9X13 glass dish. You can use whatever pan you like..the thicker it is the longer to cook. in a 9x 13 about an hour at 350. 20 minutes before done, repaint the top with a coating of BBQ sauce .
Place first 5 ingredients in a large bowl

  • Chicken strips

2 lbs. chicken breast, sliced into strips.

Sauce: 4 eggs, 1/3 c. water, 1 cup Louisiana hot sauce (the strips are NOT spicy hot), 1 1/2 tsp salt, 1 1/4 tsp ground black pepper, 1/4 tsp garlic powder.

Dredging mix: 2 c. all purpose flour, 1 Tbsp baking powder, 1/4 tsp salt.

Dip chicken strips into sauce, then into flour mixture. Fry a few pieces at a time (depends on the size of your fryer) until they are done, takes about 4 or 5 minutes.
