Making Al Fredo style fettuccini is easy :)
Prepare the pasta and drain. In a skillet, melt a couple tbsp of butter (or smart balance or whatever you use) and add a drabble of olive oil. Add minced garlic, the shrimp, and fresh ground pepper..saute for a minute or two, until the shrimp begins to turn pink. remove shrimp from pan, leaving the butter & garlic in. Add cream, add parmesan cheese, and stir. (If you don't have cream you can use 1/2 & 1/2 or evaporated milk). Stir or whisk until the sauce thickens some, then add the shrimp back and remove from the heat. Taste for seasoning. Let sit 1 min, then toss with drained pasta. It's really easy and SO much better than jarred sauce.
