What should I bring?

To my son's birthday as far as food and snacks? It's at an indoor golf park & I can't bring a crockpot, there is no assembling of food allowed, so it has to be something prepared at home or bought.

  • I would bring fruit and veggie trays and I would get little sandwiches from Subway, or I'd make them at home. :)

  • Ham'n'Cheese Ranch Roll-Ups
    2 eight-oz. pkgs Neufchâtel cheese, softened*
    1 1/2 c. grated cheddar cheese, room temp
    1 c. low or fat free mayonnaise
    1 envelope Ranch dip mix
    3/4 lb. shaved deli ham, chopped
    3/4 c. green onion, thinly sliced*
    12 (8-inch) low fat or fat free whole wheat flour tortillas


    In medium bowl, mix together cream cheese, cheddar, mayonnaise, and dip mix until well combined.
    Stir in ham and onion or cucumber.
    Spread each tortilla thinly. with ham mixture, leaving a scant 1/2-inch edge on one side.
    Roll up and wrap tightly in plastic wrap; chill well.
    Cut in half for sandwiches -- it will make 12.
    Cut these into one inch slices for appetizers.

  • Zesty Tortilla Roll Ups
    1 pound bacon
    3 tablespoons bacon drippings
    2 (8 ounce) packages cream cheese, softened
    1 tomato, finely diced
    4 green onions, minced
    1 tablespoon prepared pesto sauce
    10 (10 inch) flour tortillas
    1 pound thinly sliced smoked turkey
    1.Arrange bacon slices in a microwave save baking dish, side by side. Cover dish with a paper towel. Microwave on high until bacon is soft and lightly browned, 4 to 6 minutes. Chop bacon into small pieces; reserve 3 tablespoons bacon drippings.
    2.Combine the chopped bacon, reserved bacon drippings, cream cheese, tomato, green onions, and pesto in a large bowl; mix well. Evenly spread the cream cheese mixture on the tortillas; top each with a slice of turkey. Roll tortillas up tightly, and cut into 1/4 inch slices. Discard rounded ends.
