Any really good breakfast ideas this Sunday morning?

I'm thinking we will try something different today. I usually make pancakes or waffles of some kind served up with bacon. However, today I'm thinking more in the line of omelettes, french toast, or maybe spiced up scrambled eggs with a little more flavor.
How about you?

  • we ate sandwiches from our local deli to celebrate the last breakfast from there before the move. Try making a frittata, it's a family style, open faced omelet that allows everyone to eat together.

  • Wake-Up Casserole
    Ingredients
    8 frozen hash brown patties
    4 cups shredded Cheddar cheese
    1 pound cubed fully cooked ham
    7 eggs
    1 cup milk
    1/2 teaspoon salt
    1/2 teaspoon ground mustard
    Directions
    1.Place hash brown patties in a single layer in a greased 13-in. x 9-in. x 2-in. baking dish. Sprinkle with cheese and ham.
    2.In a bowl, beat eggs, milk, salt and mustard. Pour over ham.
    3.Cover and bake at 350 degrees for 1 hour. Uncover; bake 15 minutes longer or until edges are golden brown and a knife inserted near the center comes out clean.

  • Sausage Breakfast Wraps
    Ingredients
    1 pound turkey Italian sausage links, casings removed
    1 medium sweet red pepper, diced
    1 small onion, diced
    4 (8 ounce) cartons frozen egg substitute, thawed
    1 (4 ounce) can chopped green chilies
    1 teaspoon chili powder
    10 (8 inch) flour tortillas, warmed
    1 1/4 cups salsa
    Directions
    1.In a nonstick skillet, cook sausage over medium heat until no longer pink; drain. Transfer to a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray. Sprinkle with red pepper and onion. Combine the egg substitute, green chilies and chili powder; pour over sausage mixture.
    2.Bake, uncovered, at 350 degrees F for 30-35 minutes or until set. Break up sausage mixture with a spoon. Place 2/3 cup down the center of each tortilla; top with salsa. Fold one end over sausage mixture, then fold two sides over.

  • Easy French Toast Sticks
    Ingredients:
    •3 eggs
    •3/4 cup milk
    •1 teaspoon vanilla
    •1 tablespoon butter
    •4 slices bread, each cut, lengthwise, into 4 pieces
    •Sugar
    •Cinnamon
    •Maple syrup
    Preparation:
    Melt butter in skillet. Mix eggs, milk and vanilla in bowl. Beat well, soak slices of bread. Brown the soaked bread in skillet. Sprinkle with a little sugar and cinnamon and serve with maple syrup.
