  • My stuffed mushrooms...First, rinse and lightly oil portobello mushroom caps. For the filling mix bread crumbs with preferred fresh herbs (usually oregano, parsley, kosher salt, and fresh ground black pepper), minced fresh garlic, small amount of red pepper flakes, feta cheese and minced ham (I preferred something smoked). Fill caps, then bake on lightly oiled cookie sheet for 20 min at 350F.

  • My Ice Cream Cake. It's soooo easy.

    Crust:
    2 pkgs Ritz Crackers (crushed)
    1.5 sticks butter, melted

Mix together and press into large container.

    Filling:
2 small pkgs vanilla instant pudding
    1.5 cups milk
    1/2 gallon vanilla ice cream

Mix pudding and milk. Add ice cream and mix til smooth. Spread over crust and chill at least 1 hour in fridge. Top with Cool Whip and sprinkle with crushed Ritz. Enjoy!!
