Ideas for dinner with a LOT OF tomatoes?

Have a lot of tomatoes I just picked and would love to utilize them for a dinner tonight.

  • Salsa and tortilla chips with tacos or spaghetti

  • You could make chicago style pizza. You roll out crust, top with ground sausage, seasonings, (lots of fennel and oregano), diced tomatoes and some juice from tomatoes is ok. Top with mozzerella cheese. My mom makes this and it is so yummy. No sauce..just diced tomatoes.

  • Tomato salad, with cheese, crouton,s tomatoes, and anything else your family will eat. Add some french garlic brad and some cold cuts on the side. Favorite beverage, etc.

  • Make your own spaghetti sauce! with bruschetta! bruschetta is so simple, french bread, diced tomatoes, mozzerella cheese viola! add some olive oil and italian seasonings to your tomatoes, put on the bread top with a slice of mozzerella and bake until cheese is melty. I love it

  • Spaghetti sauce, chili, tomato soup, salsa. You could make a large recipe and freeze the extra for later.

  • Ina Garten has an awesome Scalloped Tomato recipe, its a fabulous side dish. I made it one night and ate so much I didn't even want the main course. Really good. Look it up at foodnetwork.com. I used all fresh tomatoes from my garden, I think she calls for plum, but I used a mix of plum and beefsteak.
