Italian Pasta salad.....2 bags colored spiral noodles, 2 cans each of corn, kidney beans, peas....couple of diced eggs (optional), diced chicken (optional) and a bottle of italian dressing. Cook the noodles, drain, mix in everything else and serve cold....can be easily made a day or two before...just don't add the dressing until the morning before so it doesn't dry out.
Veggie Pizza.... Buy Canned breadsticks or cresent rolls...roll out flat like a pie dough....cook at about 300 degrees until done, pressing occasionally w/ a spatula to keep it flat.
For the topping buy the powdered hidden valley ranch dip mix....add with sour cream and cream cheese....mix together until blended.
Spread on crust....top it w/ chopped broccoli, carrots, etc.
