  • Mexican Beef Soup:

beef stew meat, brown with garlic and some chili powder, oregano, salt and pepper and then add in sliced carrots, onion, red, green and yellow bell pepper, about 2 cups water and about 3 cups beef broth. After carrots are almost tender, add in about 2 cups frozen corn, add some more seasonings to taste, a splash of Worcestshire sauce, and simmer until meat is tender and veggies are cooked through.
