Favorite Not-Your-Usual Pie Recipes??

Hey mamas, since fall is around the corner, its about time for me to start rolling out my pie crusts. I would like to venture into new territory with pie and try some ones we don't usually see in the diner window. If you have a favorite or two would you mind posting please? Thanks a plenty!! :)

    You would never think from the ingredients that the recipe for Lemon Sponge Pie would work, but it does with delicious success. The recipe makes two small pies.

    2 unbaked pie crusts
    2 cups sugar
    3 tablespoons flour
    2 tablespoons melted butter
    4 separated eggs
    2 lemons
    2 cups milk (you can use a can of evaporated milk instead)

    Beat egg whites until soft peaks form.
    Cut lemons in half. Juice the lemons and remove and discard the seeds and the thick white pith separating the sections. Grate the rest of the lemon in a food processor or blender.
    Mix sugar, flour, butter, egg yolks, and lemon together in bowl.
    Add milk. Fold in egg whites.
    Pour mixture into two unbaked pie crusts.
    Bake at 400F for the first 15 minutes. Bake at 375F for 15 minutes or until done (pick inserted comes out clean..)

  • IMPOSSIBLE PIE: COMBINE: 4 Beaten eggs 1/2 stick butter or marg 2 cups milk 1/2 tsp vanilla 1 cup sugar 1/2 cup Bisquick 1/2 coconut Pour into well greased 10" pie pan Bake for 45 minutes @ 350 degrees. It's one of the easies pies you can make.

  • I had a dutch pear pie yesterday and it was aweful. The recipe is the same as dutch apple but make the pear substitue.

  • I'm not much of a pie person, but my favorite is sour cream raisin, and I have no idea how popular it is in other areas. It's not made much around here, and I've never seen it offered anywhere that sells pies or pie by the slice (diners, restaurants).

  • MyAngel- Im assuming the butter is not melted right? What is 1/2 coconut? Do you use shredded coconut?
