Does anyone have a recipe for diabetic (sugar free) muffins? Any flavor....

  • Fresh Apple Muffins Diabetic Recipe

    2 Tbsp. Soft margarine
    2 Tbsp. Sugar replacement
    Egg (beaten)
    1 1/4 c. Flour
    1/4 tsp Salt
    2 tsp Baking pwdr
    6 Tbsp. Skim lowfat milk
    Apple (peeled and minced)

    Cream margarine and sugar replacement; add in egg.
    Stir in remaining ingredients. Spoon into greased muffin tins, filling no more than two-thirds full.
    Bake at 400F for 25 min, or possibly till done. For those who like spices, you may add in cinnamon, nutmeg, ginger, cloves to the mix - just a dash of each. yield

  • I'm pretty sure any recipe can be converted to sugar free using Splenda.
