Does anyone have recipes for different kinds of salads?

We love salads but I need more variety!!!

  • chopped cucumbers, tomatoes, black pepper, 1 tbsp parmesean cheese, and about 3 tbsp sun dried tomatoe dressing....toss all together, let marinate in the fridge about 30 minutes, then serve with some diced chicken breast and romaine lettuce.

  • I don't really use a recipe...I just add whatever sounds good at the time and whatever I have on hand. Chopped salads are fun because you can add any number of things: ham, cheese, salami, pepperoncinis, tomatoes, cucumber, olives, etc. Another good combo is pear, walnut, and gorgonzola. Or avocado, tomato and cucumber. Strawberries, asiago and black pepper. Just let your imagination run wild.

  • carrots and pineapples. the fruit cancles out the carrots. its great.

  • Well I love to "copycat" restaurant salads. If I go out to eat and have a really yummy salad I try to recreate it at home. Here are some of my favorites.

    BBQ CHICKEN SALAD- greens, black beans, cheese, tomatoes, avacado, BBQ chicken breast, top with onion rings for crunch! (This is like the BBQ chicken salad at Red Robin)

    FAJITA SALAD- Top greens with fajita filling (meat, onions, bell peppers), top with sourcream, salsa, avacados and tortilla strips. I just spray tortillas with pam and bake them in the oven until cripsy

    ISLAND CHICKEN SALAD- Pecan or coconut crusted chicken breast, mandarin slices, almond slices, craisins, cheese, celery. Use Raspberry vinigrette on this.

    These are just a few.....just look at your restaurant menu next time you go somewhere to eat and see what they have on the menu. Applebees, Red Robin, Chili's etc....have great salads!
