  • Made this for my BIL for Thanksgiving last year.  He liked it so much he wouldn't let anyone else near it and took it home with him:


    Espresso Cream Roll

  • I had a strawberry canolli blintz cake. It goes something like this.
    2 cups ricotta
    1 cup of real strawberries diced
    1 cup of cool whip, unsweetened
    1/4 c of half/ & half cream

    MIX THESE ABOVE
    __________________________
    NOW ---- Make the blintz crepe part
    -----------------------------------------------
    crepe ingredients. Bisquick 1 cup, 1 egg, water 2/3 c. , 2 pkts splenda
    In a bowl, blend these until well mixed and add 3 tbsp oil. Blend again.
    --------------------------------------------------------------------------------------------------
    Spoon the crepes mix into 9x11 glass baking dish.
    THIS MIX will be firm and doughy, and make a firm baked base

    Now:
    crumble the baked bisquit into bite sized or a 50c pc sized pieces into a large server bowl or dish, and add the dollops of the mix

    Bake at 350 for 25-30 min. or until golden brown. Will be firm and "baked" appearance. Just like a bisquit

    Add the filling into pudding sized bowls, or desert dishes, after combining, like a compote.
    Very simple and easy to make.

  • You can use most normal recipes and cut the sugar by up to 1/2! Or you can substitute the sugar for Spenda or a Splenda Blend. Of you can use low glycemic sugars like Agave instead of white sugar. :)

  • Ingredients

    1 container fat free whipped dessert topping
    2 pkgs sugar-free, fat free cheesecake pudding mix
    2 cups non-fat milk
    2 cups blueberries (or other fruit)


    Directions

    Mix both packages of pudding with the milk (mixture will be thick).
    Pour half of pudding mixture into the graham cracker shell. Spread out.
    Place 1 cup blueberries on top of pudding. Press into pudding.
    Mix half of whipped dessert topping into remaining pudding mixture. Pour on top blueberries. Spread to smooth.
    Spread remaining whipped topping on top of pie.
    Sprinkle remaining cup of blueberries on top.
    Refrigerate 2 hours or until set. Serves 8.
