  • Lemon Glazed Chicken Breasts

Ingredients: 3 boneless, skinless chicken breasts; 1/2 cup flour; 1/2 tsp. pepper; 1/4 cup melted butter/margarine; 1/4 cup honey; 1/4 cup lemon juice; 1 tbsp soy sauce

    Preheat oven to 350 degrees

Pound chix breasts to 1/2 in. thickness; mix flour & pepper; dredge chicken in flour mix; set aside.

    Mix together remaining ingredients.

Put chicken in a casserole dish, pour sauce over and bake for one hour. Glaze will thicken as it cooks.

If you want to make this as an OAMC meal, after flouring chicken breasts, lay flat on a cookie sheet, cover with plastic wrap & flash freeze for one hour. After mixing the glaze, put in a quart-size freezer bag & freeze. When you're ready to make it, thaw chicken & glaze, then prepare as above.

  • I usually throw two boneless skinless breasts into a peice of tin foil, throw on some onions, mushrooms, (whatever veggies you like) a pat of butter, salt, pepper, poultry seasoning, and garlic. Put it in the oven at 400 for an hour, and it comes out perfect every time. I cut open the breasts to make sure there's no pink in the middle, and then serve it up with a baked potato, or mashed potatoes.
