Dinner suggestions for mom with cancer

I've signed up to bring over a dinner for a school family whose mom is having cancer treatments done. There are 4 people in the family and because of mom's treatments she has requested no tomato based or spicy foods.
I've never done this before, so I'm unsure of what would be a good meal. I'd like to bring something other than the typical hot dish with cream of something smeared on some meat.

  • Maybe a fruit or veggie dish? Fruit would be good because she's probably having a rough time keeping things down and staying hydrated. the fruit would feel cool. Its a nice thing you're doing!

  • Beef pot roast cooked in the slow cooker all day with potatoes and carrots and a very small onion. Use water instead of a tomato product.
