What dish do you make when you don't have much stocked? Come on ladies, let's hear your dish ideas that I'd like to call poor man's dish!

So if you don't have any meat thawed out to cook or no meat at all in the fridge, what do you make? We've all been thru this and have run out of ideas right? My "poor man's dish" is simple. Sauté diced garlic, onion, bell peppers in a small pot and then add water and a can of tomato sauce. I add seasoning and let simmer for a While. Add some canned beans and elbow noodles and let cook. It's good, cheap and easy. Or another easy one is: canned chicken breast, sliced bell peppers and onion, red chili flakes and canned Rotel Mexican diced tomato with chilis. Simmer for a while then roll this mixture in a tortilla with some cheese. Yum!!!

    whole wheat pasta tossed with butter and parmesan cheese
    whole wheat waffles spread with peanut butter (a personal favorite of my daughter's!)
    Yogurt and wheat toast
    a "sampler plate": shredded cheese, peas, bits of ww bagel or ww bread
    Spaghetti O's
    (on rare occasions) a Swanson Pot Pie

  • my SO's favorite is baked beans with cut up hotdogs in it served with's so random and sounds gross, but its good....i like to take a lb of ground beef and brown it, fry some cut up potatoes, bell peppers, and onions in the drippings, then mix the beef back in. you can really throw in whatever veggies you have around. if you want a healthier version, drain the ground beef and put it in a dish with the veggies and some beef broth and bake...either way, be sure to season well or it will be very bland....seasoned right (garlic, salt, pepper, onion, butter) its amazing!
