How do I keep peeled potatoes from turning brown?

I'm making mashed potatoes tonight, and want to peel them to get it over with, but not cook them until later. However, last time I covered them, then put them in the refrigerator and they started to turn slightly brown. Do you know of any ways to prevent this?

Also, this is gonna sound silly...but how many potatoes would you use to make mashed potatoes for three people, lol?

  • Always make more mashed potatoes. They taste even better tomorrow plus if u have enough you can re purpose them into like shepherds pie or potato cakes. Yummmmmm

    keep 'em fully submerged in water (plain water!) and the color will stay perfect

  • Thank you so much, lol. How, at 25 years old, I couldn't have figured out to keep them in water, I don't know, lol.

    Off to peel potatoes I go...yay...yippee, lol. :)

  • I actually make them 2-3 times a week!!!!!!!! I do them different every single time. Our faves are w/ white cheddar and also heavy whipping cream and chicken bouillion (I spelled that wrong) for lunch the next day I do NEW stuff to 'em for my kids. Canned chicken is a big hit. So is canned salmon.... we're weird.... lol.... plus we'll eat anything with butter in it :)

  • keep them covered in cold water with aluminum foil over them - and double the amount of potatoes according to the amount of people you are making them for - mmmm - now i want some mash a tata's - that's what we still call them in our home - our older son stated calling them that when he first started talking - today, he say mashed potatoes - while we still say it the way he first said it - old habits die hard - or maybe we're just sentimental - smiles
