    3/4 c. orange juice
    1/2 c. butter
    1 egg
    1 c. flour
    1 c. whole wheat flour
    1/2 c. sugar
    1 tsp. baking powder
    1 tsp. cinnamon
    1/2 tsp. baking soda
    1/2 tsp. salt
    1 c. shredded carrots
    1 c. shredded zucchini

Heat oven to 400 degrees. In large bowl combine orange juice, butter and egg. Add all remaining ingredients except carrots and zucchini. Stir just enough to moisten. Fold in carrots and zucchini. Spoon into greased muffin pan. Bake 18 to 20 minutes. Let cool 5 minutes. Remove from pan. This recipe makes about 1 dozen.

Beat the eggs together, and gradually stir into the batter until everything is combined. Mix in carrots, pecans, and vanilla until well combined. Pour batter into prepared pan.
3.Bake on middle rack for 60 minutes, or until it tests done. Cool in pan for 10 minutes, and then turn out onto wire rack to cool completely
