I love carrot and zucchini bread! Anyone have a recipe for bread, cupcakes,etc?

  • CARROT ZUCCHINI MUFFINS

    3/4 c. orange juice
    1/2 c. butter
    1 egg
    1 c. flour
    1 c. whole wheat flour
    1/2 c. sugar
    1 tsp. baking powder
    1 tsp. cinnamon
    1/2 tsp. baking soda
    1/2 tsp. salt
    1 c. shredded carrots
    1 c. shredded zucchini

    Heat oven to 400 degrees. In large bowl combine orange juice, butter and egg. Add all remaining ingredients except carrots and zucchini. Stir just enough to moisten. Fold in carrots and zucchini. Spoon into greased muffin pan. Bake 18 to 20 minutes. Let cool 5 minutes. Remove from pan. This recipe makes about 1 dozen.

  • cinnamon carrot bread

    3/4 cup white sugar
    1/4 cup packed brown sugar
    3/4 cup sunflower seed oil
    2 cups all-purpose flour
    2 teaspoons baking powder
    1 teaspoon baking soda
    1 teaspoon ground cinnamon
    2 eggs
    1 pinch salt
    1 cup grated carrots
    1/2 cup chopped pecans
    1/2 teaspoon vanilla extract
    Directions
    1.Preheat oven to 350 degrees F (175 Degrees C). Grease and flour a 9 x 5 inch loaf pan.
    2.In a large bowl, beat together the sugars and sunflower oil. Sift flour, baking powder, baking soda, cinnamon, and salt into the bowl while stirring occasionally. Beat the eggs together, and gradually stir into the batter until everything is combined. Mix in carrots, pecans, and vanilla until well combined. Pour batter into prepared pan.
    3.Bake on middle rack for 60 minutes, or until it tests done. Cool in pan for 10 minutes, and then turn out onto wire rack to cool completely

  • zucchini bread

    Ingredients
    3 cups all-purpose flour
    3 eggs
    2 cups white sugar
    1 cup vegetable oil
    2 cups grated zucchini
    1 cup semisweet chocolate chips
    1 teaspoon ground cinnamon
    1 teaspoon baking soda
    1/4 teaspoon baking powder
    1/2 cup sour cream
    Directions
    1.Preheat oven to 350 degrees F (175 degrees C). Grease two 9 x 5 inch loaf pans.
    2.Beat together eggs, sugar, and oil. Blend in the grated zucchini, and then the sour cream. Mix in the flour, baking powder, soda, and cinnamon. Stir in chocolate. Pour batter into prepared pans.
    3.Bake for 80 minutes. Cool on wire rack.
