  • You can use many things in place of sugar, I'm assuming they're only allergic to refined, actual sugar and not the natural sugars occurring in fruits? Try applesauce cake.
    1 c. raisins
    1 c. diced dried fruit
    2 c. water
    2 c. flour
    1 tsp. baking soda
    1/2 tsp. salt
    1/2 tsp. nutmeg
    1 1/2 tsp. cinnamon
    2 eggs
    1 c. unsweetened applesauce
    2 tbsp. liquid sweetener
    3/4 c. vegetable oil
    1 tsp. vanilla
    1/2 c. chopped nuts

Combine raisins and fruit with water. Cook uncovered until soft and water is evaporated. Cool.

Combine flour, soda, salt and spices. In bowl, combine eggs, applesauce, sweetener, oil and vanilla. Add nuts and fruit mixture Stir into dry ingredients and blend thoroughly. Pour into greased 10-inch tube pan. Bake at 350 degrees for 35-40 minutes or until tests done. 125 calories per serving.

You can leave out the nuts if they're allergic.

  • Have you tried stevia or agave nectar, possibly even honey? Those are good options...

  • Maple sugar is a good alternative dry sweetener. Maple syrup, brown rice syrup, agave nectar, and honey are good liquid sweetener choices.

  • My ds doesn't like cake or frosting or sweets in general. He asks for "Taco Ring" for his birthday every year. I make it and stick some candles in it and he's happy as a clam (his 18th b-day is coming up in February). :)
