  • Very easy, take two flour tortillas, shred sharp cheddar cheese, add chopped tomatoes or whatever else you prefer inside, butter the pan and heat on both sides until cheese is melted and tortillas are slightly browned.

  • I make them a lot and use whatever leftovers we have on hand. Sometimes I use a buttered pan but most often I use the toaster oven - less cleanup. We LOVE whole wheat tortillas, and my favorite cheese for quesadillas is colby jack. Add leftover meat, chicken, veggies, anything really. Or like today - just plain tortilla and cheese, with avocado on the side. I don't put avocado inside it because I prefer it cold. My son is 20 months old and quesadilla is a standard lunch in our house - probably eat it once or twice a week.

  • Spray pam in a pan, then cook tortilla until lightly browned. I fill my tortillas with beef, black beans, cheddar cheese, wircester sauce

  • I take whatever we have left over in the fridge (chicken, steak, etc) and season it with taco seasoning. Put a little EVOO in a pan and heat it up then I put cheese, meat, refired beans, and tomatoes, green peppers, olives (whatever I have) in between two tortillas. The kids love them and we dip them in a little sour cream and/or salsa.

  • I thought they would be easy! I LOVE mexican food...dont know why its never dawned on me to make them before! hahahaha!

Are they crispy or mushy tortillas when you do them like that? I sort of like them in the middle...not too crispy but not too soggy either.

  • Mine are far from authentic, but the kids LOVE them. Canned chicken, finely shredded cheese, taco seasoning, sour cream, a little cream of celery to make it creamy. Spread over half a tortilla x2, put them flat-side together in a dry non-stick frying pan and heat through, cut in half when done. I like to add salsa to mine but the family doesn't like that.

  • Put a little butter in your skillet, add tortilla, add shredded chicken, onion, sliced avocado, shredded cheese, salsa, tortilla on top.
Cook for a few minutes on low, flip over and done when the cheese has melted.

  • I usually make very simple quesadillas using a light cheddar blend and whole wheat (or low carb) tortillas. My son is pretty picky, so if I try to put something else other than cheese in his quesadilla, he usually refuses.

  • I like to make mine with leftover chopped up chicken, beef, or pork and whatever shredded cheese I have on hand. I serve them with salsa and sour cream.
