Serve this with a warm n crusty bread, and a pretty green salad. Since prep/cook time is about 2 hrs, serve yourself up a nice glass of wine and good tunes! :)
Prawns in Tomato Butter Sauce:
1 C Butter (divided)
2 Medium heads Garlic, peeled and minced
1 28 oz Can Crushed Tomatoes
2 Pounds Lg Prawns (shrimp)- Peeled, Deveined and Butterflied
Chopped FreshParsley (about 1/4 cup worth)
Melt 1/2 C. Butter in a saucepan over low heat. Add 1st garlic, saute 2-3 mins until soft. Stir in the tomatoes and bring to a simmer(med low heat). Continue cooking and stirring occasionally until reduced to a thick paste, about an hour or so.
In separate saucepan, melt remaining butter over low heat and saute 2nd garlic 2-3 mins.
Toss prawns in garlic butter sauce, then place on a baking sheet.
Broil until Pink- Do Not overcook (they keep cooking inside).
