what am I doing wrong?

my muffins are baking weird. The tops have formed some kind of cone like thing, like a mountain of sorts. its not a nice soft curve like regular cupcakes. It came from a box so I just added eggs water and oil. why iare they going that?

  • whenever i use Jiffy brand mix for muffins they do that...but Jiffy still IMO is the best tasting for muffins and corn bread ...

  • You could have mixed them too much.

  • Wrong temp can cause them to rise oddly, especially if there's a bit too much batter in it.

  • tyfry - I bake a LOT and even my own come out odd now & then - my stupid oven fluctuates and is such a pain - sometimes I have to set it low, sometimes right on - and I never know because I can't find a quality thermometer that helps! Think I need a repairman?!?!?! (same anon as before)

  • Oh - and even scratch muffins can come out goofy - it's not that you used a box mix. I made some scratch apple pumpkin muffins earlier this week, and used different kinds of pans - some were round, some were coned. Happens every time I have to use different kinds of pans (non-stick vs. stainless vs. glass).
