I need some really cheap recipes..

I'm on a tight budget this week and I need to get about a weeks worth of food at the store. My family is so sick of the stuff I make, we need something new that isn't too expensive. I have a 2 year old but she is not too picky. Thanks.

  • well, I have an easy recipe for carrot muffins if you are interested. My three kids (ages 10, 8 and almost 21 months) all like them a lot. They are pretty easy and don't require expensive ingredients.
    1 1/2 cups sugar
    1 1/4 cups corn or canola oil
    3 eggs
    3 cups flour (I personally use WHOLE WHEAT only, we like it better, believe it or not!)
    2 tsp. baking powder
    1 1/2 tsp. baking soda
    1/4 tsp. salt
    2 tsp. cinnamon
    two 4 oz. jars of carrot baby food jars

    Preheat the oven to 350. Cream the sugar and oil; add eggs one at a time, beat well after each. Add dry ingredients and mix well. Stir in jarred carrots. Pour batter into muffin pans and bake 20-25 minutes or until center springs back when touched.

  • Tater-Tot Casserole



    2 lbs. ground beef
    1 can cream of mushroom soup
    1 (2 pound) bag frozen tater tots
    1 cup grated cheddar cheese

    Directions

    Pat ground beef into bottom of greased 13x9x2-inch pan. Spread soup over meat and cover with grated cheese. Top with tater tots. Bake at 350 degrees, covered for 45 minutes and then uncovered for 15 minutes.

  • Tator tot casserole: 1 lb. ground beef or turkey, 2 cans or 1 bag (frozen) green beans, 1 can cream of mushroom soup, 1/2 bag tator tots. Layer in order given, bake at 350° for 30 minutes.
    Beans & weenies: 1 large can baked beans mixed with 1/2 pkg sliced hot dogs, top with other 1/2 bag of tator tots, sprinkle 1 cup shredded cheddar on it if you want, bake at 400° for 40 minutes. Serve with your choice veggie or salad.
    Smoky link casserole: layer sliced potatoes, sliced smoky link sausages, 1 can corn, 1 can cream of mushroom soup mixed with 1/2 c. milk, bake at 350° for 1 1/2 hrs

  • Ramen casserole: 1/2 lb. ground beef (browned), 2 pkgs. beef Ramen noodles, broken up, 1 beef seasoning packet from noodles, 1 can cream of mushroom soup, 1/2 c. each milk & water, 1 stalk celery sliced if you have it, 1 box frozen mixed veggies. Stir all together, pour into casserole dish, bake at 350° for 15 minutes; stir, bake another 5 mins
    Bruschetta chicken: 1 - 1 1/2 lb. cubed chicken breast, 1 tsp. basil, 1 c. shredded mozzarella. Top with a mix of 1 box chicken stuffing mix, 1/2 c. water, 15 oz. can diced tomatoes, 1 tsp. minced garlic (2 garlic cloves). Bake at 400° for 30 minutes. Serve with salad, veggies, etc.

  • Porcupine Meatballs (Serve with mashed potatoes & veggie)

    * 1 lb ground beef

    * 1/4 cup uncooked long grain rice
    * 1 slightly beaten eggs
    * 1/2 tablespoon snipped fresh parsley or dried parsley
    * 2 tablespoons finely chopped onions
    * 1/2 teaspoon salt
    * 1 dash pepper
    * 1 (10 1/2 ounce) can tomato soup
    * 1/2 cup water
    * 1 teaspoon Worcestershire sauce

    Combine the first 7 ingredients with 1/4 c. of the tomato soup. Mix well. Shape into about 20 balls and place in a skillet. Mix rest of soup, water, and Worcestershire sauce and pour over meatballs. Bring to a boil. Reduce heat, cover, and simmer for 40 minutes or until rice is soft and meatballs are set. Serve with sauce.

  • Hamburger Goulash:
    * 1 lb. ground beef or turkey
    * 16 oz. box elbow macaroni
    * 1 medium onion, diced
    * 2 cans tomato soup
    * 1 can diced tomatoes
    * chili powder or other seasonings to taste

    Cook macaroni in boiling water. While macaroni is cooking, brown beef with onion and drain. Drain macaroni. Add tomato soup and tomatoes to macaroni along with beef. Stir together, season and serve.

  • Meatloaf: 1 lb. ground beef, add an egg, some instant oatmeal or crushed saltines (enough to make the meat hold together without being too sticky), diced onion and misc seasonings. Bake at 350° for an hour. Serve with mashed potatoes & veggie of your choice.

    If you stick to store brand, buy ground turkey if it's cheaper, buy a 10 lb. bag of potatoes, frozen veggies instead of canned (except for tomatoes), those recipes will give you a good weeks' worth of meals with enough for leftovers for lunches.

    My friend from here is writing a blog. She is a GREAT cook from what we have spoken of over the years here!! I wish I caould taste her cooking her recipes are GREAT!!!! Check it out because she has awesome hints and recipes on a budget!!! Cooking form scratch is sooo much better for you than "hamburger Helper"

  • I call this poor mans tuna caserole:
    One box macaroni (less than $1)
    Two cans tuna fish (also less than $1)
    About a cup-a cup and a half of mayo (you can get a jar for about $1 at walmart and thats a whole jar)
    One can of peas or one can of corn (or whatever veggies you like, you can put a ton in there) (less than $1 each)
    Boil macaroni and mix together, spice to taste and boom dinner. If you want you can add a slice of wheat bread with butter for each person.
