  • Boil some penne, line the bottom of a casserole dish with it, pour any kind of pasta sauce over it, add uncooked chicken breasts cut into strips, more sauce, more pasta, more sauce, parmesan, bake @ 400 for about half an hour. It's delicious, always a hit with my family!!!

  • I make a chicken cassoulet in the crockpot, I adapted it from Tosca Rena's Clean Eating Cookbook, and it's really yummy. I serve it with brown rice. I also love to make chicken fajita soft tacos with boneless chicken breasts for a quick meal. Minestrone soup with a fresh whole wheat bread is another favorite of mine, and I make chili with lean beef chunks, or with ground turkey. Actually, now I think I'll make some minestrone tonight!!

  • Tacos! We usually use ground turkey... last night we had chicken tacos.

  • Spaghetti or some deviation of it...pasta is always the quick easy go to dinner in our house.

  • I make large batches of meals & freeze leftovers. Tonight is homemade chicken vegetable soup straight from the freezer. I made up a couple dozen breakfast burittos, wrapped individually in parchment paper. Hubby just grabs, nukes & goes. I'll spend a day cooking squash & freezing it. Potatoes are sliced, parboiled & froze. I make up batches of chicken fingers. thaw just enough to slice & so breading(I use crushed corn flakes, garlic pwdr, onion, pwdr, salt, pepper, & dill) will stick, then bag & refreeze.

  • I like to cook up some chicken breasts and cut them up and thro on top of a tossed salad.
    I also like to make spaghetti pie , its a family fav
    I liek to make a bunch of homemade soups and keep them in the freezer for nights when we don't feel like cooking or are pressed for time
