Michiganmom: I had a pound and a half of ground meat. Sauteed all. Yesterday I made stroganoff with half of the ground meat, mushrooms, a can of mushroom soup and leftover sour cream. While this was cooking I used the other half of the ground meat and made chili con carne.

I normally would have used all the ground meat for the stroganoff. I stretched it and have two meals. The stroganoff was served with noodles and sauteed green beans. The chili is being served with macaroni and spinach salad. I used an extra can of beans and we will probably have some left over for lunch.

Also, Michiganmom, our serving sizes do not have to be so large.

  • Great way to make it stretch! I will sometimes make chili with no meat, just add extra beans, just something to think about in the future.
