Have you ever roasted the seeds from your gutted pumpkin?

This would be a first for me. Cat Cora, the Iron Chef, says they are supposed to healthy as well as tasty. I've never actually roasted any pumpkin seeds before.

  • We toast them every year and they are delicious. Have fun making some :)

2 cups pumpkin seeds, rinsed and drained
    2 tablespoons olive oil
    1 1/2 teaspoons salt
Let pumpkin seeds dry on paper towels. Toss cleaned pumpkin seeds with oil and salt; spread out on a cookie sheet. Bake in a 250° oven for about 1 hour, or until the pumpkin seeds are dry, stirring occasionally.

  • I like em slightly burnt....they're crispier. Also, I did this recently with seeds from a buttercup squash. Yummy.
